YAH! It’s yet another Yuletide season and not even COVID-19 should stop you from eating healthy and making that wholesome dish for yourself, friends and family.

Preparing a festive meal can be taxing and complicated especially when there is a need to make a large quantity enough to serve friends, families and neighbours, or when there are many other tasks waiting to be completed. Cooking ought to be done with love and should be fun, which is why we have come up with a comprehensive recipe and straightforward steps that will help you prepare that special Basmati Fried Rice this Christmas season.

What do you need?

Basmati Rice

Cooking Oil

Onions

Garlic-Ginger Paste

Curry Powder

Chicken Stock

Blended Green Bell Pepper

Salt

White Pepper

Bay Leaf

Carrot

Green Peas

Runner beans 

Scotch bonnet pepper

Red bell pepper

Green Bell pepper

Sweet Corn

Seasoning

Shrimp

Fried Liver

Spring Onions


How to prepare Basmati Fried Rice: Step 1

i. Place a medium-sized pot on a gas cooker and add cooking oil.
ii. Once the oil is heated, add onions, garlic-ginger paste and curry powder. Stir continuously with a wooden spoon.
iii. Add a bowl of chicken stock to the mixture, blended green pepper, salt, white pepper, bay leaf and allow to boil for 3 minutes.
iv. After 3 minutes, rinse your desired quantity of Basmati rice to the boiling mix, cover and allow to cook until soft.

Step 2:
i. Place a dry frying pan on the gas cooker and add cooking oil.
ii. Add onions, carrot, runner beans, scotch bonnet pepper, red and green bell pepper, green peas, sweet corn, seasoning and stir them in the pan. When soft mix all with your cooked rice
iii. Add some shrimps, fried liver, spring onions and stir gently.

Extra tip: Serve with a peppered snail, chicken and a glass of orange juice.
